Instant Pot Chicken Stew

A while back, I promised you all the recipe and even though it took longer than expected, because of all the camper painting and all that other fun stuff, I finally decided to get this recipe to you and it so happened it’s what was for dinner tonight. I hope you enjoy it as much as I do, this is pretty much a regular meal I make either once a week or once every other week, on top of the Baby Back Ribs and of course my favorite chicken flavored rice, all made with the Instant Pot. Ok, so let’s get started.


Canola Oil
3 Boneless Chicken Breasts
2 cubes of sofrito or about 4 tablespoons (Recipe located here)
2 Packets of Sazon seasonings with culantro and achiote (red coloring)
1 Tablespoon of Minced Garlic
3 Medium sized potatoes, peeled and diced
1 1/2 cups of chicken broth

First off, let’s start by getting your instant pot ready.

Step 1: Put in a little oil in the bottom of your instant pot insert, enough to cover the bottom.

Step 2: Plug in your instant pot, if you haven’t already and push the Sauté button.

Step 3: Once you see the oil is heating up, add in your marinade (I would use 2 cubes of frozen sofrito) and add in the minced garlic and 1 packet of sazon. Let this heat up and sauté a bit.

Step 4: Add in your chicken, I used boneless chicken breast that I cut up into pieces. Let this sauté and get cooked a bit on the outside, while you peel your potatoes and dice them.

Step 5: Add in your potatoes and mix well, you can then add in your 2nd packet of sazon, stir. Keep Sautéing for a few more minutes.

Step 6: Add in the 1 1/2 cups of chicken broth, stir well.

Step 7. Place your lid on your Instant Pot, make sure knob is set to sealing, press the cancel button, and then push the manual or pressure cook button, use the + or – buttons to set the time to 10 minutes.

You are all set to let your chicken stew cook! In the meantime, I make mine with white rice, so you can begin preparing your rice.

Once the stew timer has counted down, it will begin to start naturally releasing the pressure, since my rice is still cooking, I will keep the stew going until the rice is done, then I will release the pressure in both my instant pots and get ready to plate my items. I always have fresh tomatoes with my stew and rice, but you can leave that out of even garnish it with something else.


Again, be careful when moving the knob into venting mode, keep hands and face away as it will spurt hot water and steam, always use caution.
